Knitting HELP! PLEASE!?

I am trying to knit a multi coloured scarf. Striped. A block of one color and then another. (Looks like the house scarf in Harry Potter.)
I have tried knitting it flat (I think it is called "flat knitting anyways) and whenever I switch colors there is a seam on one side that is really ugly. How can I knit this without the seam? I've tried learning how to knit in the round with circular needles, but I just can't do it.
Is there a way to knit this scarf flat the way I already know how, but without getting the ugly seam on the one side?

Use 1 x 1 ribbing (k1, p1 on an even number of stitches) It will look like stockinette stitch just a little bigger, and it will be on both sides. The ribs will hide the seam on the purl sides.
